Potential and Development of Pineapple Products as a Superior Product in Riau Province

Abstract

Pineapple producing areas in Riau Province are in Kabupaten Indragiri Hilir, Siak, Kampar and Dumai. Pineapple Production centers in Kabupaten Kampar are in KecamatanTambang with a total production of 2,150 tons per year. Whereas in Kabupaten Bengkalis the central production of pineapple is in the kabupaten of Batan, Bengkalis and Bukit Batu with production reaching 1,885 tons / per year. Processing pineapple that can be done on a household scale is instant powder and pineapple fruit leather. The analysis of pineapple instant powder laboratory analysis is the water content between 4, 93%, ash content of 1.78%, sucrose content of 49.64%, while for pineapple fruit leather the moisture content is 3%, ash content is 0.85%, pH 4.65 sugar content 42 , 4% and fiber content of 1.72%. The purpose of this study is to collect data on pineapple commodity potential based on pineapple production indicators in Riau Province and make pineapple derivative products namely instant pineapple powder and pineapple fruit leather that have economic value as superior products in Riau Province
